Briar Patch Brew Cobbler in 5 Easy Steps

Summer is the season of new life and peak freshness, and one of the best things about it at Piper and Leaf is the fresh fruit. Many of our tea blends feature fresh fruits sourced from our local farmers. It’s always a great day at our Farm Headquarters when a farmer arrives straight from the fields and orchards with a truckload of fresh, fruity goodness. As we chop and dry our fruits for tea, the whole building is filled with their wonderful aromas. It’s almost like taking a bite of the fruit with every inhale. Truly magical. And mouthwatering! You just have to get that tea to satisfy your cravings for the fruity deliciousness. 

One of our year-round favorites, but especially good during the summer, a triple berry wonderland, is our Briar Patch Brew. With bursting blueberries, blackberries, and elderberries, it’s the perfect balance of tart and sweet. When we’re processing berries, you can almost hear a cold Briar Patch Brew calling your name. One of our favorite ways to enjoy it is in a tea palmer! Add a splash or two of Briar Patch Brew to your lemonade, and you have a match made in tea heaven. Seriously.

Nothing embraces the freshness of our summer fruits like one of our fruity tea blends and a fruit-filled dessert, and while we love a good pie, there’s nothing quite like a fresh berry cobbler with a scoop of vanilla ice cream. Hot, gooey berries mixed with creamy vanilla goodness? There’s simply nothing better. 

To celebrate all the berry goodness and one of our beloved favorites, Briar Patch Brew, we thought, "Why not make a cobbler?" Sitting at a picnic with all your favorite grilled foods, packed with warm and smoky flavors, and finishing it off with your very own Briar Patch cobbler? Truly the berry on top! 

This cobbler is the perfect balance of tart berry and sweet, gooey cobbler goodness. With a biscuit dough crust, it adds a texture you never knew you needed, making it the perfect companion for any summer occasion. 

At Piper and Leaf, one of our company love languages is food…and tea, of course. As we tested out this recipe, we realized that there was something special about sharing this simple cobbler and a glass of tea with people who love our tea, our company, and each other. It was truly a delight, savored by all around our office and on our front porch, where the conversations were wrapped in the joy and appreciation of farmers, local goodness, and hot, gooey, Briar Patch Cobbler.

Briar Patch Cobbler

Cook Time: 45-55 mins      Serves: 10-12

Ingredients:

- 8 cups (approx. 1kg) mixed berries 
- 1/3 cup (67g) granulated sugar 
- 2 Tablespoons (15g) cornstarch 
- 1 teaspoon lemon juice 
- 1/2 teaspoon pure vanilla extract 

    Biscuit Topping 
    - 1 and 1/2 cups (188g) all-purpose flour (spooned & leveled) 
    - 1/3 cup (65g) granulated sugar 
    - 1 and 1/2 teaspoons baking powder 
    - 1/4 teaspoon salt 
    - 6 Tablespoons (85g) unsalted butter, cold and cubed 
    - 1/2 cup (120ml) buttermilk, cold 
    - for topping before baking: 1 Tablespoon buttermilk and coarse sugar  

      Step 1: Preheat and Prep

      First things first, preheat your oven to 350°F (177°C). Grease a 9×13 inch pan, so nothing sticks.

      Step 2: Make the Filling

      In a large bowl, gently mix together your berries, sugar, cornstarch, lemon juice, and vanilla extract until everything’s well combined. Pour this mixture into your prepared pan and spread it out evenly.

      Step 3: Make the Topping

      Now for the fun part—the topping! In another large bowl, whisk together the flour, sugar, baking powder, and salt. Use a pastry cutter or two forks to cut in the butter until you get a coarse, crumbly texture (think pea-sized pieces). If you have a food processor, it makes this super easy!

      While stirring, slowly drizzle in 1/2 cup of buttermilk. Mix until it’s all evenly combined. Grab handfuls of dough, gently flatten them out, and place them over the berry filling. No need to be perfect—just cover most of the berries.

      Step 4: Add Finishing Touches

      For a shiny, crunchy, golden brown crust, brush the top of the dough with 1 tablespoon of buttermilk and sprinkle with some coarse sugar. These steps are optional but totally worth it!

      Step 5: Bake

      Pop the cobbler in the oven and bake for 45-55 minutes, until the top is golden brown and cooked through. To check, stick a toothpick into the biscuit topping—if it comes out clean, you’re good to go! Let the cobbler cool on a wire rack for about 5 minutes before serving.

      Enjoy!

      Serve your warm berry cobbler with a scoop of vanilla ice cream or a dollop of whipped cream. Yum! If you have any leftovers, cover and store them in the fridge for up to 5 days.
