Delicious 10 Step BBQ Peach Chicken

Have you ever heard of a universal truth? Something that is always true, no matter what. They’re rare, but when it comes to all of us at Piper and Leaf, we've got a couple to share: 

1. We love our tea. Shocker, right? 

2. We love food, especially when shared with loved ones. 

Given these truths, it's no surprise that tea-infused food recipes are a dream come true for our Piper and Leaf family. Believe it or not, you can incorporate tea into just about anything! 

To celebrate the season of fresh produce and outdoor grilling, we’ve crafted the perfect Orchard Peach BBQ chicken recipe: sweet, savory, and crispy chicken that will leave you wanting more. 

While we used an oven for this recipe (thanks to some grill issues—it's currently out of commission), you can absolutely use a grill. In fact, we encourage it! Just maintain a temperature of 450°F, and you’re ready to grill up a fruity, BBQ chicken feast!

BBQ Orchard Peach Chicken 

Serves 6  Cook Time: 40 Minutes 

Ingredients 

Marinade: 
- Leftover loose tea from freshly brewed Orchard Peach concentrate 
- 2 tablespoons olive oil 
- 2 tablespoons Worcestershire sauce 
- 2 teaspoons Dijon mustard 
- 2 teaspoons apple cider vinegar 
- 2 teaspoons garlic powder 
- 2 teaspoons salt 
- 1 teaspoon red pepper flakes 
- 1 red onion, thinly sliced 
Chicken: 
- 6 bone-in, skin-on chicken thighs   
Rub: 
- 1 tablespoon baking powder, necessary for crispy skin!
- Salt 
- Pepper 
Sauce and Peaches:  
- Orchard Peach BBQ Sauce 
- 3 peaches, pitted and thinly sliced 
  

Instructions  

1. Prepare the Marinade: In a bowl, combine all marinade ingredients and mix thoroughly. Reserve half of the marinade for later.

2. Marinate the Chicken: Place the chicken thighs in a resealable bag and add half of the marinade. Seal the bag and refrigerate for at least 30 minutes, or up to 24 hours for maximum flavor.

3. Preheat the Oven: Set your oven to 450°F (230°C).

4. Prepare the Chicken: Remove the chicken from the marinade and pat it dry with paper towels. This helps the skin get crispy. Sprinkle the chicken thighs with salt, pepper, and baking powder, and rub them gently to spread the seasonings evenly.

5. Cook the Chicken: Grease a skillet (cast iron is ideal, but stainless-steel works too) and add both the reserved marinade and the marinade from the bag. Place the seasoned chicken thighs in the skillet on top of the marinade.

6. Add the Peaches: Wedge the peach slices between the chicken thighs.

7. Roast in the Oven: Put the skillet in the oven for 10 minutes.

8. Baste with BBQ Sauce: After 10 minutes, take the skillet out and brush the chicken thighs with Orchard Peach BBQ sauce. Return the skillet to the oven and repeat this process two more times, brushing the chicken with BBQ sauce every 10 minutes.

9. Check for Doneness: After the third layer of BBQ sauce, ensure the chicken has reached an internal temperature of 165°F (75°C).

10. Serve and Enjoy: Garnish with fresh rosemary and extra BBQ sauce. Serve up and enjoy a deliciously peachy meal!
